Copyright Huntsville Times Knickerbocker Red Here is our preliminary planned product, Knickerbocker Red. Its a moderately hoppy, but balanced, agressive American Red Ale with a good Cascade taste and a strong malty backbone. The good head retention and foam lets you know that this beer has a lot of body, which complements the rich hop aroma and taste. As with all of Blue Pant's beers, this will be conditioned in the keg, unfiltered, and balanced. Corduroy Rye Its a 7% ~70 IBU Rye IPA. The hop profile is Magnum, Centennial and Cascade with Centennial dry hop. The Rye adds some really interesting character that I think goes perfect with the hop flavors. The majority of the bitterness comes from later boil hopping which makes it a much smoother bitterness than what you can get with long boils and hops added right at the beginning. Pinstripe Stout This beer is still in development, but has seen a limited release. It is an 8.0% ABV American Imperial Stout with chocolate, coffee, and vanilla flavors. The high quality coffee grounds are added directly to the fermenter to minimize the bitterness. Vanilla is also added which imparts a sweet taste to the beer not normally found in this big of a stout. Its smooth, rich and is a greak break from the winter weather.
